I think there is too much computer games influence on the design of these dwarves. In LOTR the shorty guys looked much better imho. And beards - You can't have a proper dwarf without a nice long beard...and where are the hoods?
I do think Biffur, Boffur and Bombur look very well

IF you haven't read the "Witcher" series, i strongly recommend them. They've got very rangery feel at times

Of course one can always use fabric covered maille, like that in the byzantine and near eastern world in the late middle ages:
Check those wall-paintings - the guy on the left is with fully closed coat, while the one on the right has it open.

Yes. That would be interesting.
If I remember correctly in the books the rangers are wearing gray cloaks, and then the fellowship also got grey ones from Lorien.
